Ammonium Chloride is comprised of Ammonium NH4 (+1) and Chloride Cl (-1). When compound is placed into water it dissociate just like any other compound.The difference is the energy from the water is actually required to help "break" apart the compound into its dissociated particles. Because the water has to "put energy into breaking the molecule the energy has to come from somewhere (thermodynamics).This energy input into the molecule is observed as an endothermic reaction and the solution feels cold.
